Baked Apple Oatmeal: An Easy Fall Breakfast for Slow Mornings

Baked apple oatmeal on a plate with apples and autumn leaves

Some mornings start with a calm, happy family around the table. Most mornings start with somebody who can't find a shoe, somebody who wants cereal "but not that cereal," and me trying to get everyone fed.

When the leaves start turning, this is the breakfast I want on the table: a warm dish of baked apple oatmeal. It's our family's go-to, from FIVEheartHOME (full recipe and printable card here). It's simple, it smells like fall, and little hands can help with a lot of it.

What you'll need

Ingredients from FIVEheartHOME's Baked Apple Oatmeal. It makes 6 servings in an 8x8 dish.

  • 2 cups rolled oats
  • 1 cup chopped walnuts
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 cup diced apples (about 1 medium apple)
  • ½ cup applesauce
  • ½ cup milk or almond milk, at room temperature
  • 2 eggs, at room temperature
  • ¼ cup maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon pure almond extract
  • ¼ cup coconut oil, melted and slightly cooled

How it comes together

Here's the short version. It all gets mixed in one big bowl, spread into a greased 8x8 dish, and baked at 350°F for about half an hour, until it's set and golden on top. Give it a few minutes to cool, then slice and serve it warm.

Little helpers welcome

This is a great recipe for getting the kids in the kitchen:

  • Measuring and pouring: the oats and spices are easy for small hands to scoop and dump into the bowl.
  • Stirring: everyone wants a turn with the big spoon.
  • Counting: cracking (or counting) the eggs is a fun job for a preschooler, with a grown-up close by.
  • Grown-up jobs: the chopping, the hot oven and the melted coconut oil.

One heads-up: the recipe has walnuts, so keep that in mind if anyone at your table can't have nuts.

Breakfast in pajamas (our favorite kind)

Autumn Leaves bamboo kids pajamas from Olive & Rocket.

The best mornings are the slow ones, when nobody has changed out of their jammies yet and there's a warm dish of oatmeal on the counter. That's a lot of syrup, milk and laundry days for one pair of pajamas.

That's why we weave more bamboo into every thread. Our fabric is about 95% bamboo, and you can feel it right away: it has a richer, more luxurious feel. It's also a thicker fabric that lasts, so it holds up instead of thinning and getting holes. There's extra stretch that grows with your child, and the fabric stays breathable and gentle on sensitive skin. There are no tags inside to scratch, either. These are the pajamas I reach for in our own house.

Our Autumn Leaves pajamas are my pick for fall mornings like this. You can see all of this season's prints, including Football and Hockey, in our Fall collection.
